Why use microdata and schema.org standards?
To over simplify things to make a point, Google vacuums up two types of data, structured and unstructured data.
Unstructured data is the blog of text from your website. Google then uses a number of complex functions and algorithms to slice and dice that data so they can use it in the Search Engine Result Pages (SERPS).
Structure data, is just that. Think of it like Excel with a header row. If the header row is labeled business name the data in the next row and the same column should be the name of the business.

Structured data tells Google exactly what is in each column and row based on a preset standard based on Schema.org.
For local businesses, using Microdata or structured data to tell Google all the key data points about the business location allows Google to NOT GUESS. You can set the lat / long, the logo image, hours of operation, price range, phone number and a lot more.
